I can totally relate, my wifes brew club does a cider press every year. Two gallons stays sweet cider and three is made into hard cider, this year it’s a honey-cider mead.
One year my wife and I made cider caramels. It was a rather arduous process to stir and keep the temp window. Legit took two peoples’ constant attention. They were, however, DELICIOUS.
