      Because a cave’s temperature rarely fluctuates by much, and has a known constant. Said constant is usually in the 50-60 degree (F) range, depending on where the cave is located.

        I also infuse my own vodkas. I could probably also do bourbon and whiskey and whatnot, but I’ve only ever tried with vodka so far.
