I hope this helps someone! I moved mine to the fridge late Friday night, so hopefully I won't be reliving my personal de-icing hell tradition this year!
I managed to pull it out in time last year, and it felt like it was completely thawed, but then when we pulled it out it turned out it wasn't cooked all the way through (even though the thermometer was placed correctly and said it was done). Honestly, I'm not sure which minor mishap is worse, but I guess it wouldn't be Thanksgiving without one.

It’s pretty much just the two of us now and those pre-stuffed turkey rolls, while not as good as homemade, aren’t that bad. Plus they’re not so big we’re eating turkey for two weeks and there’s no carcass so you don’t even need to strip the meat off the bones. That, and making my favourite hot turkey sandwich is as simple as cutting a slice and tossing it on the bread. G-d, I got so lazy once the kids were grown, and I LOVE it 😉

Heaven forbid I should try and change anyone’s cooking methods passed on from generation to generation 😉 but I always ran cold water over the bird for awhile until I was sure it was thawed completely (stick your hand in and if it still feels frozen or you touch ice crystals between the ribs from the inside it probably is) then stuffed it and covered the roasting pan tightly with tented foil (shiny side IN) making it steamtight, and put it in at 350 for twenty minutes per pound plus a half hour, taking the foil off for the last half hour or so to brown the skin, rubbing the skin with olive oil and coating it with a good shaking of paprika helps with that. It was never dry, always cooked through and falling apart, and lots of juice for gravy. I use the water from the vegetables and potatoes for gravy and the starch from the potato water helps thicken it without adding so much flour or cornstarch 🙂
Thanksgiving was last month up here and I made a 1.5kg turkey roll with all the trimmings and we were happy all week 🙂

I’ve definitely done the cold water over the bird multiple years in a row! I managed to get it out on time this year (there was still a chunk of ice in the cavity, but it was thawed, so it counts!). We have a large crowd for Thanksgiving, so I always have an exceptionally large bird, but always forget that the “one day per five pounds” is only applicable for so big a bird.
